Rene Redzepi is Moving Noma to Australia for 10 Weeks This January

Chef Rene Redzepi, the founder of Copenhagen’s famed Noma, will be relocating the restaurant's entire team to Sydney for a 10-week stint, set to begin in January. Noma Australia will be set on the edge of the water in the city’s Barangaroo neighborhood, and will be open for lunch and dinner Tuesday to Saturday. No word yet on how to make reservations or what the meal will cost.

In a statement the chef released on Sunday, he wrote: “Since my first trip to Australia several years ago I’ve been wanting to spend more time there— exploring, tasting, and understanding its ingredients. From the tropical fruit in the north, to the native pepper leaf of Tasmania; the pristine fish and shellfish of the very south, and all the new exotic wonders in between. Our research forays will take us into the bush, around every shoreline, weeding our way through Flinders and Kangaroo Island. Somewhere along that course I may even get my first surfing lesson.”

Side note: If Redzepi's pop-up in Tokyo is any indication, seats at Noma Australia will be painfully hard to come by. But don't worry, there's a slew of fabulous Noma alumni opening up restaurants all over the world.
