Canada’s Culinary Pearl

In the world’s second largest country by area, Prince Edward Island is the smallest province. (It’s a little smaller than Delaware, as a point of comparison.) The island may be little but it packs a big culinary punch. A green farm in the Atlantic, the island is most famous for its shellfish—clams, lobster, mussels, and oysters, which make their way to raw bars around North America. The fresh, briny, crisp Malpeque oysters are even more flavorful when you eat them straight from the sea, and you’ll enjoy them even more when you savor them alongside new friends who share your passion for oysters. The Prince Edward Shellfish Festival each September began in 1996 and has grown into a popular four-day festival of cooking demos and oyster shucking competitions.
