San Francisco's Twitter Building opens three new restaurants this summer, making it the city's hottest new dining destination.

A triumvirate of flashy new restaurants are opening this summer in San Francisco’s newest nexus of cool: Market Square, also known as the Twitter Building. The block-long building is centered in the quickly transforming Mid Market neighborhood, also home to the new Strand Theater. These restaurants are departing from San Francisco’s typically small, bistro-size digs, by offering massive real estate and edgy urban design, including plenty of concrete, black accents, and steel.

Dirty Water opened this week. Cocktail geeks have been salivating over the tweets coming from this ambitious, over-the-top watering hole since 2013. While the building’s most famous resident promotes information that’s easily accessible, the draw here is anything that’s hard to find. The bar is armed to the teeth with enough rare spirits (Pappy Van Winkle bourbon), less-available beers (52, on tap), and coveted wines (100 by the glass) to satisfy any libation elitist. The “paleo-friendly” menu focuses on primal meats like suckling roast pig with succulents, deer tartare with golden beets and smoked egg, and roasted squab with smoked eggplant, cherries, and puffed basmati by a Michelin-starred chef, served in a communal-style dining format.

Next up will be Bon Marche Brasserie, a 7,500-square-foot dynamic Art Deco restaurant from the team behind the city’s AQ and TBD. Inspired by Paris’s Marais district, French flair includes leather seating, brass finishing, and mosaic penny tiles. Food and drink options will be parceled into varying segments of the market-like space, which includes a cafe, oyster bar, lounge, and formal dining room. Expect seasonal riffs on brasserie classics, like steak tartare and moules frites served alongside modern terrines, roulades, and pâtés. The beverage program is certainly no afterthought, touting both an advanced-level somm and a master cicerone (one of only nine in the world) brewing brasserie-style beer in a custom brewery developed to pair with the food.

Coming later this summer is the resurrection of a former San Francisco classic: the Cadillac Bar & Grill. It’s been shuttered since 1999, but the original founder is ushering it into the modern era with contemporary takes on regional Mexican cuisine and hand-shaken Cadillac margaritas. The restaurant will boast an urban feel with high ceilings and a poured concrete floor.
