Recipe of the week: Shan khao

Shan noodles are one of the famous foods in Burma. They are derived from Shan State which is in the eastern part of the country, and they can be eaten for breakfast, lunch or dinner, or as a snack between meals. Here is a recipe for Shan khao-swe which is a very popular dish, with both locals and visitors alike. Serves 4.

Shan noodles recipe

Ingredients

3 cloves of pounded garlic
1 teaspoon of pounded ginger
250g of onion chopped
150g of tomato puree
1/2 cup of peanut oil
1/3 teaspoon of turmeric powder
1 teaspoon of curry powder
1/2 teaspoon of dark soya sauce
1/3 teaspoon of Shan masala (Shan spices)
200g chicken diced into small cubes
Salt and seasoning (as you like) to taste

1 tablespoon of chopped coriander
1 tablespoon of chopped spring onion
5 pieces of lime sliced
1 tablespoon of pounded chilli
Cracker

3 ltr of chicken stock
2″(inch) of sliced or crushed ginger
10 cloves of crushed garlic
2 onions Cubed
Salt and pepper to taste

100 gm of soya beansprouts
200 gm of cut mustard leaves
800 gm Shan fresh noodles

Directions

Heat the oil and sweat the onion with turmeric powder until the onion is cook. Then add the pounded garlic and ginger and add curry powder; add tomato puree and salt until tomato is cooked. After the chicken and the rest of ingredients.

Bring the stock to the boil, and then add onions, ginger and garlic. Simmer about 30 minutes and add the correct amount of seasoning.

Boil the water; when it is boiled, blanch the noodles, mustard leaves and soya beansprouts.

To serve, place into serving bowls, pour in the stock, and then add 2 tablespoons of gravy and sprinkle over 1 teaspoon of roasted peanuts powder.
