More than 8.25 billion gallons of bottled water were sold in the United States in 2006, creating 1.5 million tons of plastic waste. The good news?People are turning back to tap—and their sources are getting better every day. San Francisco and Paris have recently launched "tasty tap" campaigns, and a handful of high-profile restaurants, like Mario Batali’s Del Posto in New York (85 Tenth Ave.; 212/497-8090) now serve only from the faucet. Hotels in general have been slower to kick the bottle, but some are getting conscientious about their choices. Austin’s Hotel San José (1316 S. Congress Ave.; 512/444-7322; sanjosehotel.com) provides only bottled rainwater from nearby Dripping Springs, cutting down on its carbon footprint, and the Hotel Carlton in San Francisco (1075 Sutter St.; 415/673-0242; jdvhotels.com; doubles from $129) supplies guest rooms with jugs of filtered tap.
